This Two Point Snickers Caramel Apple Salad is simple to make and packed with protein, diced apples, crushed pineapple, nonfat yogurt, and topped with pieces of snickers bar-Perfect for breakfast, a potluck, or even as a dessert.

If you have followed my journey for a while then you probably know how much LOVE I have for dessert salads. The one dessert salad that I absouletly enjoyed prior to my WW journey is the Snickers Apple Salad. If you haven't heard of this dessert salad let me explain what it is-according to Wikipedia-it's a mix of Snickers bars, Granny Smith apples, whipped cream and often pudding or whipped topping served in a bowl. It is a potluck and party staple in Iowa, where the "salad" is popular alongside glorified rice, Watergate salad, jello salad and hotdish.
Now- I'm not from Iowa but it's a salad that can be found at most potlucks where I live. I mean who doesn't love candy bars mixed with pudding and whipped cream? But…then again that screams high in sugar and points! This Two Point Snickers Caramel Apple Salad is a recreation of that classic dessert salad.
What is this Snickers Caramel Apple Salad made with?
This Two Point Snickers Caramel Apple Salad is made with a few ingredients. For this particular fluff recipe I wanted to keep the points low -so I decided to use a caramel protein premier shake instead of skim milk when making the butterscotch pudding. I also omitted the cool whip inside the salad -which really is the key in keeping this recipe low in points. I use crushed pineapple for sweetness-and diced apples that makes this salad taste like a caramel apple.
How do I make this Snickers Caramel Apple Salad?
In a large mixing bowl, combine the pudding mix, and the Caramel Premier Protein Shake.
Whisk until well combined.
Add non fat plain yogurt. Mix until smooth.
Drain the juice from the can of crushed pineapple-draining the pineapple juice keeps the crushed pineapple zero points.
Pour the drained crushed pineapple into the pudding and yogurt mixture. Mix until incorporated.
Gradually fold in the chopped apples.
Chill in the refrigerator or serve immediately. Top with chopped mini snickers before serving.
Drizzle sugar free caramel sauce over the top before serving, if desired.
Ingredients:
- 1 (32 oz.) container non fat plain or Greek yogurt
- 2 large Granny Smith apples, diced
- 1 ( 1 oz.) Jell-o sugar free Vanilla or Butterscotch pudding mix
- 1 (11 oz.) or carton Caramel Premier Protein Shake or 11 oz. Carbmaster no sugar added milk
- 1 ( 20 oz.) can crushed pineapple, drained
- 3 fun size snickers bar, or 2 Peanut Butter Built Bar, chopped
- 2 Tbsp Smucker's sugar free caramel sundae sauce
- fat free Reddi Whip, optional topping
Directions:
- In a large mixing bowl, combine the pudding mix, and Caramel Premier Protein Shake. Whisk until well combined.
- Add non fat plain yogurt. Mix until smooth.
- Drain the juice from the can of crushed pineapple-draining the pineapple juice keeps the pineapple zero points.
- Pour the drained crushed pineapple into the pudding and yogurt mixture. Mix until incorporated.
- Gradually fold in the chopped apples.
- Chill in the refrigerator or serve immediately.
- Top with chopped snickers before serving.
- Drizzle 1 tsp sugar free caramel sauce over the top of each serving (2 Tbsp over the entire salad) and top with fat free Reddi Whip, if desired.
